TOFU AND VEGGIES served over QUINAO with the special Gunion sauce
All Ingredients are Organic
1 or 2 squares Organic non-gmo extra firm Tofu
1.5 cups quinoa
2 cups water
1/2 Broccoli head
2 tbsp Coconut oil
2 cloves garlic
1 tsp Coriander
1 tsp Zaatar
1 tsp Turmeric
1 tsp Ginger
1 tsp Oregano
1 tbsp Sea salt
1 tsp Black pepper
1 cup Tri-colour carrots
1 cup Celery
3 Kale leaves
3 Red cabbage leaves
1 cup Chicken stock
Boil water with 1 tbsp coconut oil and add quinoa. In a small pan, cook garlic and onions separately with salt. Cut and prep all ingredients into cubes. Melt coconut oil with ½ cup water in another pan and add the zucchini and tofu with salt, pepper and all the spices and tofu, followed by carrots and celery and chicken stock and once half cooked, add the cabbage, kale and coriander. Add salt to taste along the way. Once all is cooked to a nice crunchier consistency, turn heat off and ready to serve! One bowl for your fur baby and in another add quinoa, tofu and veggie mixture and all the ‘gunion’(garlic onion) sauce you’d like! Easy as pie😉
Tofu isn’t toxic, but soy is not a complete protein for dogs. If your dog eats tofu, he may experience a mild case of gas or a more severe case of bloat. Also, soy is a common food allergy among dogs, so be sure to monitor your dog if he eats tofu.
*The Middle-Eastern spice blend called za’atar ingredients are: sesame seeds, ground sumac, and dried za’atar (an herb with a savory-thyme-oregano flavor). You can buy za’atar blends in Middle-Eastern markets, but you can also make it at home. In the blend shown above, thyme and oregano or marjoram stand-in for the za’atar herb, which is rarely available in the United States.
To make about 1/2 cup of za’atar, put 3 Tbs. dried thyme, 1 Tbs. lightly toasted sesame seeds, 1 Tbs. ground sumac, 1/2 tsp. dried oregano or marjoram, and 1/4 tsp. kosher salt in a spice grinder. Pulse a few times to mix and break up some of the seeds—there should still be many whole seeds visible. Store in a cool, dark place for up to six months.
If sumac is unavailable, substitute 2 Tbs. dried lemon peel.
